White rice, black beans sauce and Légumes

This is one of my favorite haitian dish! It offers a wide range of variation from the ingredients to the preparation and cooking time. It is very rich in fiber and vitamins, I remember that it was not my favorite dish as a kid but growing up I ended up loving it and as a bonus my kids love it!

I can promise you that if you try it you will fall in love with because from the tenderness of meat well soaked in the vegetables’ juice to the texture of the rice and the thickness of the bean sauce, you can only ask for a second plate.

Ingredients:

  • Rice
  • Black beans
  • Meat ( Beef, pork and blue crab)
  • Eggplant
  • Carrot
  • Chayote
  • Spinach
  • Cabbage
  • Green onion
  • Spices
  • Pepper

Cooking time: 2-3 hours with the modern cooking tools but it took my grand parents much longer lol.

  1. I had to take a closer look at this magnificent delicacy of a dish. I love love seafood so this dish is now ok my future taste radar.

    1. The “légumes” offers you a wide range for substitutions. I mixed meat and seafood (blue crab) in mine but you could use just seafood if you would like!
