Where are my coconut flavor fans? This recipe is for you and mostly for the excitement and the pleasure of your senses. “Haitian Konparèt” recipe is similar to a cake recipe but with the objective of a compact cake, more like of a sweet bread from Jérémie, the capital and largest city of the Grand Anse Department in Haiti.

This recipe is a simple and easy way to bring the special taste of home in my kitchen for the delight of my family and friends’ taste buds.

Ingredients:

  • 1 cup of melted butter
  • 1 1/2 cup of sugar
  • 3 eggs
  • 1 1/2 tbsp of ground cinnamon
  • 1/4 tsp of nutmeg
  • 1 tbsp of lime juice
  • 1 tsp of coarse kosher salt
  • 1 1/2 tsp of vanilla extract
  • 1 1/2 tsp of finely grated lime zest
  • 1/2 cup of finely diced ginger
  • 1 tsp of coarse kosher salt
  • 2 cups of unsweetened shredded coconuts
  • 2 1/2 tsp of baking powder
  • 3 cups of all-purpose flour
  • 1 ½ cups of coconut milk

Directions:

Using an electric mixer or a whisk and a big bowl (if you are feeling strong), mix the melted butter and the sugar thoroughly.

In a separate medium size bowl, beat the eggs while progressively adding the ground cinnamon , the nutmeg, the lime juice, the salt and the vanilla extract until you have a creamy mixture, then add it to the mixer.

In a bigger bowl mix the flour and the baking powder.

Then, add the ginger, the shredded coconut and some of the coconut milk. Next start by adding the flour then some more coconut milk and repeat until all the ingredients have been added and you have a soft dough.

On a floured surface, roll the dough to shape your Konparèt or you can use a cookie cutter.

*** I sometimes add more coconut milk for a softer konparèt.

Place your konparèt in a tray on baking sheet and bake in the oven at 350o for 20 minutes until they turn into a soft shade of golden brown.
