Haïtian Appetizer: Smoked Herring Chiquetaille “Chiktay Aransò”

“Smoked herring chiquetaille” is a famous Haïtian appetizer that makes everyone who ever tastes it mouth wateringly begging for more. Fair warning! It is not usually recommended for people who can not or does not like spicy food. However, the beauty of homemade food is that you get to adjust it to your own taste (like I usually do lol)!

The recipe below offers a simple and easy way to prepare “Chiktay”.

Ingredients:

  • 2 lbs. of smoked herring filet
  • 2 cups of Onion, diced
  • 2 cups of Bell pepper (various color), diced
  • 3 Scotch bonnet pepper, minced
  • 1/4 cup of Green onion, chopped
  • 1 clove of garlic, minced
  • 1/4 cup of parsley, chopped
  • 1/4 cup of celery, diced
  • 1/8 teaspoon of Adobo seasoning
  • 2 Lemons (for the juice)

Directions:

Let the smoked herring filet soaked in water at room temperature for 2-3 hours to soften it. After a couple of hours, your herring filet should be tender and if not, let it soak a little bit longer. In the meantime, cut your veggies and squeeze your lemons into in small bowl for later use .

Once the herring is tender enough, drain the water, then pull out any remaining bones from it ( keep in mind that the soft bones are consumable. I usually use my haïtian wooden mortar and pestle or I use the food processor to shred the herring because I like my “Chiktay” really soft and super fine. 

In a separate pan, warm up the oil, add the garlic, the green onion, then add all the vegetables and stir for 3-5 minutes. Add your seasoning, stir, then add your herring and the lemon juice to the mixture. Mix and stir everything very well for about 3-5 minutes and Voilà!

Serve with bread and/ or crackers. Bon Appétit!!!
